Swim suit season is on the horizon, although it might be hard to believe for some people that are currently dealing with snow in the mid west. Crazy I know! Come visit Florida!

Can you believe Memorial Day weekend is not this weekend but next?  I have created an amazing and delicious menu for you.  You can bring these delicious 21 Day Fix approved dishes to that BBQ that has been on the calendar for sometime and not fret about packing on the pounds.

21-Day Fix Memorial Day Recipes

Appetizer:
Buffalo Chicken Dip

Ingredients:
(Large party batch)
2 cups plain greek yogurt
2 cans shredded chicken
1 cup shredded cheese
1/2 cup hot sauce
*Mix the ingredients together in large bowl then place in baking dish. Place in the oven for 30 min at 375. Stir ingredients often while baking.

(Individual fix serving)
6 tbsp plain greek yogurt (1/2 red container)
6 tbsp shredded chicken (1/2 red container)
3 tbsp shredded cheese (1/2 blue container)
hot sauce
*Mix the ingredients together in bowl then place in baking dish. Place in the oven for 15 min at 375.

When enjoying this dish I use veggies for dipping or whole grain cracker/chips. This recipe is also great to make for a dinner and have buffalo chicken wraps. Use whole grain tortillas when serving wraps! Watch out this stuff is addicting!

Container Count: 1 red, .5 blue, 1 yellow (chips) OR 1 green for veggies {individual portions}

Entree:
Chicken, Pineapple, and Red Pepper Kabobs

Ingredients:
8 bamboo skewers
1 lb. boneless skinless chicken breast tenders (not breaded)
1/2 cup Coconut Aminos (soy sauce substitute)
8 tsp. local natural honey
2 cloves minced garlic
4 purple containers of fresh pineapple chunks
4 red bell peppers, cut into 1″ chunks

Soak bamboo skewers in water covered for 30 minutes. Meanwhile, cut chicken into 1-inch pieces. Place in resealable food-storage plastic bag or container. Add next three ingredients. Seal bag and shake gently to mix. Refrigerate at least 30 minutes to marinate. Heat gas or charcoal grill.

Drain chicken, discarding marinade. Thread chicken, pineapple chunks and red pepper pieces onto bamboo skewers in whatever order you wish, dividing evenly among skewers.

Place kabobs on grill over medium heat. Cover grill and cook 4 to 5 minutes on each side or until chicken is no longer pink in center. Serve immediately. I love cauliflower rice with this dish. It’s a nice compliment and I don’t miss the carbs from the rice!

Container Count: 2 kabobs count as 1 red, 1 purple, 1 green, and 2 tsp.

Dessert:
Flowerless Chocolate Brownies {taken from the Beachbody blog}

These dark chocolate flourless brownie muffins are delicious and surprisingly healthy.

Total Time: 40 min.
Prep Time: 20 min.
Cooking Time: 20 min
Yield: 12 servings, 1 cupcake each

Ingredients:
1 (15 oz.) can chickpeas (garbanzo beans), drained, rinsed
3 large eggs
½ cup pure maple syrup
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
3 Tbsp. coconut oil, melted
1 tsp. pure vanilla extract
1/3 cup dark chocolate chips

Preparation:
1. Preheat oven to 350° F.
2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
3. Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
4. Divide batter among 12 prepared muffin cups.
5. Top each muffin with about four chocolate chips; push into batter.
6. Bake for 18-20 minutes, or until toothpick inserted in center comes out clean.
7. Cool completely and enjoy!
