I crave pancakes a lot! They were one of my all-time favorite foods when I was a kid. Not always the healthiest though! I would eat the kind from a box and wash them down with tons of syrup! I find I still crave them, but was looking for a healthier version and came across a few recipes online. I combined my favorite parts of each one and came up with my own! I LOVE this easy 21 Day Fix organic protein pancake recipe when I am craving pancakes. Fulfills that craving but is easy on the waistline!

They have a lot more protein then regular pancakes. If you like them plain with no topping then they would be even healthier for you because it would reduce the number of carbohydrates and make it a more balanced meal! I have made them two different ways. One way is to blend the banana in the pancake mixture and the other is to place a small amount of coconut oil in a small pan and heat the banana in the coconut oil and place as a topping on the pancakes (pictured above). I only eat 2 pancakes and save the rest or share! This recipe makes 2 servings but it really depends on how big you make the pancakes!

1 tablespoon organic extra virgin olive oil (EVOO), coconut oil or whatever oil you like to use
1 cup organic cottage cheese
1 cup organic steel cut oatmeal
2 organic, cage-free eggs
1 tablespoon organic vanilla extract
1 organic banana (optional)
1 teaspoon organic coconut oil

Heat oil in medium pan. Combine cottage cheese, oatmeal, eggs, vanilla and banana (optional) in blender (love using my Vitamix) or food processor. Pour pancake batter into medium pan with heated oil and cook until golden brown. Top with a small amount of coconut oil or 1/2 a banana cooked in coconut oil and eat! They do taste pretty sweet without syrup. Kids lot them too! You don’t even have to tell them what they are eating. If they get used to eating them the healthy way, they won’t even want them the unhealthy way!

21 Day Fix Protein Pancake Recipe Equivalents

21 Day Fix containers used: 1 yellow, 1 red, 1 purple, 1 1/2 teaspoon

small amount of extra virgin olive oil to cook only 1/2 teaspoon or less, just lightly grease the pan
2 yellows of organic old fashioned oats
1 red organic cottage cheese
2 organic, free-range eggs
1 organic banana
1 tablespoon organic vanilla
1 teaspoon organic coconut oil
dash to 1 teaspoon of organic cinnamon (to taste)

Blend oats, eggs and cottage cheese in blender or food processor. Lightly grease medium pan with olive oil. Pour pancakes onto lightly greased medium pan and cook until desired. Simultaneously heat banana in coconut oil in a separate small pan. Top pancakes with coconut oil and banana mixture and serve. This makes 2 servings.
