Easy Recipe for Organic Cuban Rice and Beans

I LOVE to make this as easy recipe for lunch or dinner when I don’t have a lot of time. I usually have all the ingredients on-hand so I have an easy recipe to go to whenever I am in a bind. You can add additional seasoning for flavor, such as organic chili powder, or red pepper flakes to make it more spicy. Play with it to find your favorite! 🙂

Cuban Rice and Beans

1 cup organic brown rice
1 tablespoon organic olive oil
1/4 cup organic onion finely chopped
1/4 cup organic green bell pepper finely chopped
1 clove organic garlic finely chopped
1/2 teaspoon himalayan salt and 1/4 teaspoon organic pepper to taste
1 teaspoon organic ground cumin
2 cans organic black beans
1/4 cup organic vegetable broth
cilantro (optional)

Cook the rice according to the package directions. Meanwhile, heat the oil in a saucepan over medium-high heat. Add the onion, bell pepper, garlic, 1/2 teaspoon salt, and ¼ teaspoon pepper and cook, stirring occasionally, until softened, 5 to 7 minutes. Stir in the cumin and cook for 1 minute. Add the beans and vegetable broth. Simmer, covered, for 10 minutes. Serve over the rice. Top cilantro (optional). Eat! Yummy!
