I found this recipe for spinach and feta quiche with sweet potato crust in Cooking Light Magazine and changed it a bit to add some more flavor. I think you could use sweet potatoes or regular potatoes for the crust and each way you would get a bit of a different taste. Next time I make it I would use regular potatoes. I didn’t really like the sweat with the salty to be honest.
Spinach and Feta Quiche With Sweet Potato Crust
Active time: 24 minutes
Total time: 1 hour and 10 minutes
Cooking Spray (I used vegan butter spread and it worked fine too)
2 medium sweet potatoes
1 tsp extra virgin olive oil
1 (5 oz) bag of fresh spinach
1/2 cup unsweetened almond milk
1/4 tsp salt
1/4 tsp ground black pepper
1 tsp crushed red pepper
1 tsp garlic powder
8 large eggs
1.5 oz feta cheese crumbled (about 1/3 cup)
- Preheat oven to 375 degrees F. Cook potatoes in microwave or back in oven until soft enough to smash. Coat 9-inch pie plate with cooking spray (I used vegan butter spread). Smash potatoes in bottom of pie pan. Heat a large nonstick skillet over medium. Add oil and onion and saute 3 minutes. Add spinach and saute 3 more minutes. Remove from heat and cool. Combine milk and next 5 ingredients (through eggs) into a medium bowl. Stir and whisk together. Arrange spinach mixture in crust, pour egg mixture over spinach. Sprinkle with feta. Bake at 375 degrees for 35 minutes or until egg mixture is set. Let stand 5 minutes and then cut into 8 wedges. Eat and enjoy.
The recipe in cooking light used an alternative method for the potatoes. Skin and slice the potatoes into even 1/8 inch thick slices. Preheat oven to 350 degrees F. Coat the 9-inch pie plate. Layer the sweet potatoes in slightly overlapping concentric circles on the bottom and up sides of the plate, cutting slices in half to fit. Place them rounded side down around the sides. Bake in preheated oven fro 20 minutes or until potatoes are slightly tender. Place pan on iron rack and then increase over temperature to 375 degrees F and complete the recipe the same was as described above.
